Breakfast Muffins

10-12 muffins

Ingredients

  • 4 eggs
  • 1/4 cup olive oil
  • 1 cup ripe banana mashed
  • 1 cup canned organic sweet potato or organic pumpkin
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp powdered ginger
  • 1 tsp pumpkin pie spice
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup almond meal
  • 1 cup ground flax seed
  • unbleached muffin papers

Directions

  • Preheat oven to 400 degrees F
  • Place unbleached muffin papers in muffin tin
  • Add eggs to large mixing bowl and beat together, add remaining wet ingredients and mix thoroughly 
  • Add in the cinnamon, ginger, pumpkin pie spice, baking powder, baking soda and sea salt and mix thoroughly
  • Then add the almond meal, mix thoroughly
  • Finally add the ground flax seed and mix thoroughly
  • Fill muffin tins to the very top
  • Bake for 20-25 mins or until tester toothpick comes out clean.
