Chickpea & Butternut Squash Crock Pot Curry

Ingredients

  • 2 1/2 cups fresh or frozen cubed organic butternut squash
  • 1 1/2 cups dried organic chickpeas
  • 1 small organic onion chopped
  • 2 cloves of organic garlic chopped
  • 1 13.5 oz can of organic coconut milk
  • 11/2 cups organic frozen peas
  • 11/2 cups organic frozen greens (spinach, kale or collards)
  • 1 14.5 oz can of organic diced tomatoes
  • 1/2 cup canned organic pumpkin
  • 3 cups organic vegetable or chicken broth
  • handful of fresh chopped organic cilantro
  • 5 tbsp yellow curry powder
  • 1/2 tsp red chili pepper flakes
  • salt and pepper to taste

Directions

  1. Rinse chickpeas 
  2. Add all ingredients to crock pot
  3. Give them a stir
  4. Cook on high for 6 hours
  5. Top with a few fresh cilantro leaves
  6. Serve over quinoa, rice, a bed of spinach or enjoy like a thick soup!
