Spicy Bean Salad


Ingredients

  • 1 can of organic chickpeas drained
  • 1 can of organic black beans drained
  • 1 can of organic adzuki beans drained 
  • 4 cups tomatoes diced
  • 2 cups jicama diced
  • 3 spicy peppers (jalapeno or banana peppers) diced
  • 1 bell pepper diced 
  • 2 cups sliced green onions or chopped sweet onions
  • 1 cup chopped cilantro

Dressing: 

  • 1/4 cup extra virgin olive oil
  • juice from 2 limes
  • 2 tsp sea salt
  • 2 tsp ground cumin

Directions

  1. Put all salad ingredients in a large bowl
  2. whisk dressing ingredients together in a separate bowl 
  3. Pour dressing over salad and mix
  4. Serve and enjoy!
