Vegetarian Crock Pot Chilli

4 hours on high or 8 hours on low in crock pot

Yields

~8 servings

Ingredients

  • 1 onion chopped
  • 5 cloves of garlic chopped
  • 1 red bell pepper chopped
  • 1 cup baby carrots chopped
  • 2 handfuls of chopped dark leafy greens (kale, spinach, mixed greens)
  • 1 28 oz. can of fire roasted tomatoes
  • 1 15 oz. can of adzuki beans
  • 1 15 oz. can of cannellini beans
  • 1 cup of dry lentils
  • 1/2 cup of uncooked quinoa
  • 6 cups of vegetable broth
  • 1 tbsp. coriander
  • 1 tbsp. cumin
  • 1 tbsp. oregano
  • 3 tbsp. chili powder
  • 1 tbsp. tomato paste
  • 2 tbsp. extra virgin olive oil
Optional Toppings:
  • Green onions
  • Diced Avocado

Directions

  1. Place all ingredients into crock pot
  2. Give them a stir to mix them up
  3. Cook on low for 8 hours or on high for 4 hours
  4. Enjoy!
  5. Store leftovers in the fridge for an easy lunch or dinner another day or night
