Yam & Adzuki Bean Hash

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, diced
  • 2 medium yams, diced small
  • 2 teaspoons dried thyme
  • 1/2 to 1 teaspoon ground cumin
  • 1 can adzuki beans
  • 4 cups greens (spinach, kale, collards, mixed), finely chopped
  • black pepper to taste
  • salt to taste
  • garlic powder to taste

Directions

  1. Heat a large skillet over medium heat.
  2. Add olive oil, onions and a few dashes of salt. Sauté for a few minutes.
  3. Then add yams, thyme, and cumin. Sauté for a few minutes uncovered then cover your pan and cook for about 15 to 20 minutes, stirring occasionally, until yams are tender. Watch carefully so they don't burn.
  4. Add adzuki beans and greens. Sauté a few minutes more, or until greens are tender.
  5. Add pepper and garlic powder to taste.
