Pumpkin Quinoa Porridge

Yields

3-4 servings

Ingredients

  • 1 cup quinoa
  • 1 2/3 cup filtered water
  • 1 can (15 oz) organic pumpkin
  • 3/4 cup organic canned coconut milk
  • 21/2 tsp cinnamon (or to taste)
Optional spices:
  • nutmeg to taste
  • ginger to taste
  • pumpkin pie spice to taste
  • cardamom to taste
Top with all or a combination of:
  • diced apple slices
  • banana slices
  • coconut flakes
  • pecans
  • walnuts
  • pumpkin seeds
  • ground flaxseeds
  • chia seeds
  • hemp hearts

Directions

  1. Bring quinoa and water to a boil in a sauce pan over high heat on the stove.
  2. Once boiling, reduce heat to low, cover and simmer for 12-13 mins.
  3. Add in pumpkin, coconut milk and spices - mix together.
  4. Cover and continue to simmer on low another 2-3 mins (or until desired constancy in reached).
  5. Spoon into bowls, add toppings of your choice and enjoy!
  6. Store any leftovers in the fridge for about 1 week
