Instructions:

  1. In a large saucepan, combine the quince slices, water, honey, and lemon juice. Bring to a boil, then reduce the heat to low and let it simmer for about 30 minutes until the quinces are tender and fragrant.
  2. While the quinces are simmering, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  3. In a mixing bowl, combine the whole wheat flour, melted coconut oil, coconut sugar, grated ginger, ground cinnamon, baking powder, and salt. Mix well until you have a dough-like consistency.
  4. Divide the dough into small portions and shape them into cookies. Place them on the prepared baking sheet.
  5. Bake the cookies for approximately 10-12 minutes or until golden brown. Allow them to cool on a wire rack.
  6. Once the quinces are done, remove them from the saucepan and let them cool.
