Health Benefits of Quince and Ginger

Quince, a fruit with a rich history in traditional medicine, is known for its numerous health benefits. It is packed with vitamins, antioxidants, and dietary fiber that aid digestion, boost your immune system, and promote gastrointestinal health. Ginger, on the other hand, is a powerful spice that possesses anti-inflammatory, antibacterial, and antioxidant properties. It helps alleviate nausea, supports digestion, and enhances circulation.

The Recipe

  • 2 large quinces, peeled, cored, and cut into slices
  • 1 cup of water
  • 1/4 cup of honey
  • 1 tablespoon of lemon juice
  • 2 cups of whole wheat flour
  • 1/2 cup of coconut oil, melted
  • 1/2 cup of coconut sugar
  • 2 tablespoons of fresh ginger, finely grated
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of baking powder
  • Pinch of salt
  • Additional sweetener (optional)

  1. In a large saucepan, combine the quince slices, water, honey, and lemon juice. Bring to a boil, then reduce the heat to low and let it simmer for about 30 minutes until the quinces are tender and fragrant.
  2. While the quinces are simmering, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  3. In a mixing bowl, combine the whole wheat flour, melted coconut oil, coconut sugar, grated ginger, ground cinnamon, baking powder, and salt. Mix well until you have a dough-like consistency.
  4. Divide the dough into small portions and shape them into cookies. Place them on the prepared baking sheet.
  5. Bake the cookies for approximately 10-12 minutes or until golden brown. Allow them to cool on a wire rack.
  6. Once the quinces are done, remove them from the saucepan and let them cool.
  7. Serve the fragrant poached quinces alongside the freshly baked ginger cookies for a delightful, healthy treat. If desired, drizzle some additional sweetener over the quinces for added sweetness.
